Cheddar Cheese Scones Recipe Ingredients
- 2 cups sharp cheddar cheese
- 4 large eggs
- 2 ½ sticks butter
- 2/3 cup buttermilk
- 4 cups flour
- 2 cup cornmeal
- 4 T. baking powder
- 1 T. Pepper
Instructions
Preheat oven to 375. Lightly butter a baking sheet. Combine flour, cornmeal and baking powder. Cut butter into little cubes and combine into mixture until it looks like coarse meal. Add eggs and buttermilk and stir to mix. Add in cheese and knead the dough until it holds together. If it is too crumbly to stay together, add a couple tablespoons more buttermilk and knead again. Repeat if necessary but remember that scones are somewhat dry so it should not be a bread dough consistency.
Roll out dough to ½ inch thickness on a lightly floured board. Cut out little rounds of dough with a 3 inch cookie cutter and place them on the lightly buttered baking sheet. Combine scraps, roll out dough again and repeat until all the dough is made into forms. Cut the rounds into quarters and bake for about 30 minutes.
They can be made ahead of time and warmed before serving by wrapping in foil and heating at 350 for 10 minutes.
